Don Juan Manchego DOP is produced exclusively with high quality milk from the Manchega breed of sheep. By combining old world techniques with a state of the art facility and equipment, this 4-month Manchego has great character. This cheese has a floral aroma with a gentle, nutty flavor, making Don Juan Manchego the mildest version of this Spanish classic.

The 4-Month Manchego is made in strict adherence to the traditional process, and is certified PDO (Protected Designation of Origin). Using no preservatives on the rind, this all-natural cheese is hand molded with herringbone prints, to mimic the traditional look when cheese curds were pressed with a straw cheese belt. Its semi-firm paste has a rich golden color and smooth texture.
